Château Cassat will be happy to welcome you for a visit of its cellars and a tasting of its vintages, within its family exploitation, where we do everything possible to produce wines expressing at best the specificities of our precious terroir, in the respect of the tradition.
Our 6-hectare estate, certified HVE 3, combines the Merlot grape variety and the clay-limestone soil, which produce structured wines with long ageing potential. The know-how is passed on from father to son. The grapes are harvested by hand and carefully sorted. The grapes are picked when ripe and produce wines with a deep, dense colour and a wide range of aromas.
Our wines charm with their fleshy and pulpy texture, but never heavy, because despite the trend towards global warming, we are lucky to have a quality terroir, which allows the wine to keep all its freshness. The tannins are well present, finely coated, and ensure a good aptitude for ageing.
We vinify in concrete vats, a classic container which has proved its worth and insulates the wine well from temperature variations during maturation, and keeps the heat in during fermentation, in addition to thermoregulation. Our wines are bottled 1 to 2 years after the harvest depending on the severity of the winter.
Château Cassat is ideal with poultry, red and white meats, cheeses, soft and dry cheeses, foie gras, and other dishes. However, be surprised to make your own experience, and don't hesitate to taste our wines relatively young, for different "sensations".
