These soft little cakes are the famous Saint-Émilion macaroons.

This gourmet speciality has been handed down from generation to generation in the medieval town since the Ursuline sisters established their convent there in 1620.  

Less colourful than their Parisian cousins, Saint-Émilion macaroons are made from sweet and bitter almonds, egg whites and sugar!

Today, only Nadia Fermigier, Mrs Blanchez's successor, has the traditional recipe for Saint-Émilion macaroons!

 

So drop by the shop to discover them but also at the Parvis des Thés, a tea room that welcomes visitors for a gourmet break (1 place Pioceau, behind the collegiate church).
